Situated on the slopes of the Poás Volcano in Costa Rica’s West Valley, Volcán Azul is the flagship estate of the Castro Kahle family. This family has been trading coffee for over 200 years! The coffee from this estate is a limited selection of exclusive micro lots with unique qualities that come from their menu of varieties, such as Villa Sarchi.
This varietal was first discovered in the small town of Sarchi in Costa Rica. It is loved for it’s compact plant structure and stability in high elevation and strong winds. It is a natural mutation from Bourbon, which contains a single-cell mutation causing dwarfism. So the seeds are small and compact, much like Caturra. Villa Sarchi is known for its bright and fruity characteristics whithin the cup.
In this case, they sealed the ripe cherries in tanks at a controlled elevated temperature, slowing the fermentation and concentrating the fruit characteristic of this variety. It really shows up post roast!
Full of aromatics, I get a sweet smell of guava and cherries. About three days off roast, I can definitely taste the guava, but it needs to rest longer. 1-2 weeks off roast, it ages into a nice Cabernet with hints of raspberry tart. It has a juicy mouthfeel, and as it lingers it has a pleasant pink salt flavor.
This coffee is very interesting and one I will enjoy for awhile!
