Finca El Paraíso has gained worldwide recognition for its scientific approach to fermentation, creating coffees that are vibrant, consistent, and unlike anything else from Colombia. This coffee is a perfect example of their innovation to advanced processing techniques, as well as the Castillo varietal.
This coffee is extremely clean, and not as funky as you might think. It’s definitely sweet , giving cotton candy or candied fruit vibes. High amount of esters and bright acidity, yet soft and not bitey or winey. This makes a beautiful, well rounded cup of coffee.
Behind these notes is a precise process: double fermentation with pulp using a custom “Paraíso Red Fruit” culture made from mucilage and cascara, followed by thermal shock and careful dehumidified drying. The result is a clean, fruit-forward profile that stays true to its character from sample roast to production.
This is definitely one of my favorite coffees this year.
