Shakiso is a town in the Guji Zone of Ethiopia. More than 500 coffee growers in the area bring their cherries to the Gigesa Washing Station, located in the Danbi Uddo Kebele. Each grower holds about 2-5 hectares of farm land, all of which are about 1800 meters above sea level.
The Gigesa washing station holds NOP and EU Organic certifications!
The cherries go under very meticulous quality control, ensuring proper treatment every step of the way. Cherries are immediately put into a floatation tank to separate lower quality cherries. They are them left under shade for up to 5 hours to let the surface water dry before being spread out on raised drying beds. This natural drying process takes up to 18 days.
In the cup, you might smell a sweet florals and taste red berries like cherry or strawberry. It has a very mild citric acidity overall, and lactic acidity. The creaminess might make you think of milk chocolate and honey, and the juicy body will give you grape and strawberry juice notes.
